$79 CAD · Limited to 4 students per class

Tired of Gluten-Free Bread That Tastes Like Cardboard?

Let’s be honest.

Most gluten-free bread is:

  • Dense
  • Gummy
  • Dry by the next moring
  • Bland, slightly sweet and artificial taste

You deserve bread with:

  • A crackling crust
  • Real sourdough tang
  • Structure and softness
  • Zero mystery ingredients

And baking at home with online recipes?
They usually fail—not because of you, but because those recipes don’t account for Victoria’s unique climate.

Bread recipes often fail because yeast is a living organism that behaves differently based on temperature, humidity, and flour quality—not because you’re doing something wrong. Success comes from learning to judge the dough by feel and appearance, not blindly following recipe times.

And you deserve a process that actually works where you live.

Why This Bread Actually Tastes Like Industrial

Gluten-free bakeries rely on gums, stabilizers and fillers. I don’t.

In this class, we bake with:

Organic Flours

Milled just 20 minutes from this kitchen
(rice for sweetness, buckwheat for depth, millet for a nutty finish)

Fresh Local Eggs

From a small farm I visit weekly—flavor and structure you can taste

Guernsey Gold Butter

From grass-fed cows, produced in small batches for richness and depth

This isn’t generic gluten-free baking.
This is hyper-local sourdough, adapted to Victoria’s environment.

👉 This is the only place in Victoria where you’ll learn gluten-free sourdough at this level.

Gluten Free Sourdough FAQs

Yes. This is a dedicated gluten free facility. Every ingredient, tool, and surface is free from cross-contamination. I don’t use wheat flour in any form, and the fermentation process I teach creates naturally gluten free sourdough, not just “low gluten” bread.

Commercial sourdough often has wheat flour added back in for texture, and fermentation doesn’t eliminate gluten entirely—it just breaks it down partially. My method uses absolutely no wheat or gluten-containing grains, relying entirely on wild yeast and gluten free ancient grains for structure.

Don’t panic—it happens! That’s why you have my personal troubleshooting support after class. Most “dead” starters are just sleeping and can be revived with the right feeding schedule. You’re never alone in this journey.

Absolutely! Students come from all over Greater Victoria—from Sooke to Sidney. The drive to Cordova Bay is worth it for the hands-on attention you won’t get in larger group classes. Plus, you leave with everything you need to continue baking at home, saving you trips to specialty bakeries later.

When you buy a loaf, you get one meal. When you take this class, you get a lifetime skill and a living starter that produces unlimited bread. Many students calculated that the class pays for itself after baking just 8-10 loaves at home versus buying artisan GF bread at $13-14 per loaf in Victoria.

✋🏻 Stop Buying $14 Loaves. Start Baking Your Own.

Imagine pulling a crackling-crust, golden loaf from your own oven. knowing exactly what’s in it, and knowing you made it yourself.
